It's Christmas time and that means time for cookies here's an easy, tasty, and chewy cookie packed with sweet cranberries, coconut flakes, and a refreshing taste of orange.
So Cranberries and oranges always remind me of Christmas and I was looking for a cookie recipe using these ingredients together, the addition of sweetened coconut flakes makes it all the more interesting.
I found this recipe online but I put a couple of twists on it, I substituted a cup of white sugar with brown making it less sweet, and chewier, and also substituted the vanilla essence with fresh orange juice to add to the orange taste in the biscuit. If that isn't what you like just replace the orange juice with vanilla essence.
Coconut Cranberry Cookies
Ingredients
1 ½ cup (3 sticks) unsalted butter, room temperature
1 cup packed brown sugar
1 cup white sugar
1 tablespoon grated orange peel
1 large egg, room temperature
2 tablespoons fresh orange juice or 2 teaspoons pure vanilla extract
3 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups dried cranberries
1 1/2 cups sweetened flaked dried coconut
Directions
Preheat the oven to 180 C/350F and line 2 baking trays with parchment paper.
In a large bowl with the mixer on medium speed, beat the butter, sugar orange peel, and orange juice or essence depending on what is your preference until smooth. Beat in the egg next until blended.
In a medium bowl, mix the flour, salt and baking powder. Add this to the butter mixture and stir to mix, on a low speed until the dough comes together. Now add in the cranberries and coconut flakes, and mix till the dough comes together.
Shape the dough into 1-inch balls and place about an inch apart on the baking sheets.
Bake in the preheated oven for 10 to 15 minutes or until the cookie edges just begin to brown(shorter baking time will yield a chewier cookie; longer baking time will yield a crispier cookie)
Transfer to racks to cool completely and enjoy!
