Seriously, this is the easiest and tastiest roast chicken recipe. I find that cooking it in an air fryer makes for the moistest chicken. Do try it, you will not be disappointed. Of course, where there's a roast, I would recommend having roast vegetables on the side, especially roast potatoes.
I've tried cooking roast chicken in conventional ovens and it's always been tricky- sometimes it comes out great, sometimes it's dry and other times, it's undone or burnt. This air fryer method has always provided great results and because it's so quick and easy, you don't have to wait for the weekend to do a roast; weekday roasts are now possible. I use a Philips air fryer and the wire mesh basket can easily accommodate a 1.4 kg full chicken. If you have a different brand, you will want to make sure your chicken fits comfortably inside the basket.
Since we are cooking this in an air fryer, it's best to use only dry ingredients. First, you prepare the spice rub for the chicken, which takes less than 5 minutes. Below, I list out my own spice rub recipe, but you could also use any store-bought preferred rubs.
Next, leave the chicken to marinate anywhere from 30 minutes to overnight in the fridge.
Now, this is important preheat the air fryer at 160C(330F) for 5 minutes, do this so that the chicken skin doesn't stick to the wire mesh of the air fryer. Once the basket is preheated, place the chicken breast-side down into the basket and set the timer for 30 minutes. While waiting, catch and an episode of your favorite Netflix show or do the laundry. Once the 30 minutes is up, open the basket and flip the chicken over (breast side up) and set the timer for an additional 20 minutes. once the time is up, take the chicken out of the basket and keep it covered with an aluminum foil. Let it rest it for 5-10 minutes to absorb all the juices.
That's it, that's all, it's done! After you take the chicken out, wait a few minutes before cutting into it.
Roast Chicken in an Air Fryer
Prep time: 20 mins
Cooking time: 50 mins plus marinating time
Serving: 4
wash and clean the chicken. Pat, it dry and set it aside.y. If using a store-bought rub, be ready with the same.
1 whole chicken 1.2-1.4kg
Onion powder: 1 Tsp
Garlic powder: 1 1/2 Tsp
Chili powder: 1 Tsp
Dried oregano: 1/2 Tsp
Dried basil: 1/2 Tsp
Cumin powder: 1 Tsp
Paprika: 1/2 Tsp
Salt: 1 Tsp
Pepper: 1/2 Tsp
Lemon: 1 (optional) to stuff the cavity
Instructions
Wash and clean the chicken. Pat it dry and set aside.
Mix all the dry ingredients and keep your spice rub ready. If using a store bought rub, be ready with the same.
Without tearing the skin, gently apply the spice rub under the skin onto the flesh all over and apply the remaining rub on the outside.
Stuff the cavity with a cut lemon if doing so(optional).
Let the chicken marinate for at least 30 minutes or overnight in the fridge.
Preheat the air fryer for 5 minutes at 160 C (320 F)
Place the marinated chicken breast side down inside the basket and spray it with an oil or butter spray if you have one. Set the timer for 30 minutes.
Once the 30 minutes are up, open the basket and turn the chicken over breast side up. Spray again with the butter or oil spray and set the timer again for 20 minutes.
Take the chicken out of the basket and keep it covered with an aluminum foil. Let it rest it for 5-10 minutes to absorb all the juices.
Serve the chicken with roasted vegetables or potatoes and enjoy!
