Here's a simple, tasty recipe for beans that's a perfect side dish to be served with salmon or other grilled meats.
Beans. They're a staple vegetable in supermarkets all through the year, there's nothing very exciting about them on their own. However, these garlicky, lemony stir-fried beans make the perfect accompaniment for any dinner and pairs well with grilled fish or meat. I like to serve them with grilled salmon. This recipe comes together fast, with only a few ingredients and very minimal prep time.
Stir-Fried Garlic Beans
Ingredients
Beans: 500 g
Garlic: 2 cloves, minced finely
Onion: One small-sized, sliced thinly
Chili flakes: 1 Tsp
Lemon: juice of half a lemon
Parsley: 2 Tbsp, chopped
Salt and pepper, to taste
Instructions
Wash the beans and snap off their ends. If the beans are too thick or long, cut them in half.
Put the beans in a steamer basket, place it over water and steam for eight minutes. If you are looking for a softer bite, continue steaming for a few minutes more.
Pour a tablespoon of olive oil in a skillet on medium heat and after it's hot, add the chili flakes and garlic. Wait a few seconds and add the sliced onions. Sauté for about a minute.
Add the steamed beans to the skillet, stir them until the beans are well coated in the seasoning and let them cook for a few more minutes.
Season with salt and fresh pepper to taste. When you are happy with the cooking of the beans, add parsley and lemon juice.
Mix well and enjoy!
