This week, I am continuing with the Mexican theme/bowl preparation with some easy-to-make, tasty chicken fajitas. Fajitas in Mexican cuisine refer to any grilled meat which is served with rice or tortillas, which makes it an incredibly versatile dish to make for a weeknight dinner. You could buy taco seasoning at the store or make it quite easily at home to marinate the chicken strips, and add bell peppers and onions to add a hint of sweetness. What you will need:
Chicken: Use boneless chicken breasts, cut into thin strips
Bell peppers: Red, yellow, and green
Taco seasoning: This can be made and stored in a bottle to use when needed or can use store bought.

Chicken Fajitas
Prep time: 20 minutes, plus 30 minutes for marinating
Cooking time: 10 minutes
Servings: 6
Ingredients:
For the taco seasoning:
Chili powder: 1 Tbsp (increase or decrease to your preference)
Garlic powder: 1/2 Tsp
Onion powder: 1/2 Tsp
Crushed red pepper flakes: 1/4 Tsp
Oregano: 1/2 Tsp
Paprika: 1/2 Tsp
Ground cumin powder: 1 1/2 Tbsp
Salt: 1 Tsp
Black pepper: 1 Tsp
For the chicken fajitas:
Chicken breasts: 1 kg or 4 boneless breasts, cut into strips
Bell peppers: red, yellow, and green peppers half of each, cut into strips
White onion: 1, sliced
Cilantro: 1 Tbsp, chopped finely
Juice of a lime
Instructions:
Mix together all the ingredients for the taco seasoning and set aside.
Clean and cut the chicken breasts into thin strips. Rub the taco seasoning onto the chicken strips and let it marinate in the fridge for 30 mins (optional).
Heat a tablespoon of any oil in a frying pan or skillet at medium-high heat, when hot, add the marinated chicken strips and fry for about 5 minutes or until the chicken is almost cooked.
Now add in the onions and mix. After about a minute, add in the peppers and stir.
Let it cook for 2 more minutes, then switch off the heat. Add the cilantro and lime juice and enjoy with rice or tortillas and any veggies of your choosing.
